Hailed as one of America's leading charcuteries, Olympia Provisions handcrafts its salumi with old-world precision and patience. The Oregon-based company partners with farmers who raise their pork humanely and sustainably, with no hormones or antibiotics. The salumi is seasoned with fresh herbs and spices, stuffed in natural casings and dry cured for three weeks. This sampler includes four kinds of European-inspired salumi created under the direction of master salumist Elias Cairo. Slice it up for antipasto platters, cheese boards, sandwiches, pizza toppings, or a simple and satisfying snack.
